That sounds like a fascinating dish...I'll have to try it. Is it equal parts carrots and turnips? I've been wanting another way to prepare turnips, I'm not crazy about them by theirselves. Chicken Ranch Casserole as made by the K & W cafeteria! Too much trouble with just me (and I'm trying to cut down on the carbs) but it is devine. I don't like turnips, my mom used to put them in stew and I always mistook them for another piece of potato... My favorite food right now is my Potato Cheese Enchiladas: Great for leftover baked or boiled potatoes Cut potatoes into bite sized pieces, grate some cheese (any kind will do, but i prefer cheddar and monterey jack), chopped onion, black olives, and diced green chiles (canned). Fry corn tortillas briefly on each side to soften, fill with potato, cheese, onion, chiles, and olives. Roll up and place in greased baking dish, repeat until pan is full, (Usually I make 6-12 enchiladas depending on pan size etc.) Pour enchilada sauce over enchiladas (I usually use 'green' sauce, but 'red' sauce works very well also. Bake at 350 F for 30-40 minutes (until sauce is bubbling)...remove from oven...let cool 10 minutes before serving...I usually put a big dollop of sour cream and garnish with green onion... -------------------- Perception is everything

Total "Thumbs UP" on this one idee! For maybe a variation, and quicker prep if time is short, use all the same ingredients except for tortillas, and make a variation of Potato Skins; oh, and use Guacamole generously! Or, serve with slices of avacado, Mmmmm! |

There is a family fave side dish usually served at the big "all the trimmings" meals; it is carrots and turnips. They are best if pressure cooked together, then mashed with butter, some salt for taste and serve. It has been generational now for four generations that I know of, daughter-of-stusson being among the fourth. It's one of my 'comfort foods'. That sounds like a fascinating dish...I'll have to try it. Is it equal parts carrots and turnips? I've been wanting another way to prepare turnips, I'm not crazy about them by theirselves. Yes, equal proportion by weight of each, (pound for pound). Note, and maybe idee will like this as well (see his comment above), yellow turnips are more palatable then the white. Trivia: 'neeps' is the common Brit venacular for turnips |
